A Zero Waste Dining Experience

A few weeks ago I had the pleasure of attending an event that combined a few of my favorite things: food, sustainability, zero waste, great friends, and inspirational people.  Lauren Singer, of Package Free Shop & Trash is for Tossers, and Doug McMaster of the zero-waste restaurant Silo Brighton wanted to host an event that combined their passion for zero waste and sustainable farming… and to do it in New York City. After years of dreaming, the Zero Waste Dining Series was born.

The hosts paid attention to every detail. The food was locally sourced and sustainability grown, with contributions from a variety of places including the Brooklyn Grange & Blue Hill at Stone Barns. The venue, the Fitzcarraldo in East Williamsburg / Bushwick, is a carbon neutral space and restaurant. The place settings and decorations were all either reusable, edible, or compostable. And the culinary team from Silo even came over from England to cook for everyone, using their knowledge and commitment to both amazing food and zero waste.

All combined, this was one of the most enjoyable dining experiences I’ve ever had. Thank you to these amazing humans for putting together this perfect evening and inspiring others to be more conscious about what they consume!
